Recipe Ideas using granola

  Enjoy as a hot cereal, gently cooking with milk or half and half.

  Use as a topping on ice cream.

  Mix with yogurt and fruit.

  Add to fruit salad to provide crunchy texture.

Apple Betty Recipe

3 apples

1/2 cup bread crumbs

1 cup 100% Organic Muesli

2 teaspoons cinnamon

1/2 cup brown sugar

1/3 cup melted butter

1/2 cup milk OR water

 Preheat oven to 350°.
Slice or chops apples.
Mix together bread crumbs, muesli,
  cinnamon and sugar, then add apples.
Add butter and milk and toss well.
Spread into an oiled baking dish
  (about 9x9 inches).
Bake 35 to 45 minutes.
  Serve hot or cold.


Delicious Banana Bread Recipe

About 2 cups ripe bananas

1/2 cup butter, softened

½ cup honey or maple syrup

2 eggs

1/2 cup yogurt

1 teaspoon vanilla

1 1/2 cups your favorite NENB granola

1 cup flour

1 teaspoon baking powder

1 teaspoon baking soda

1/2 teaspoon salt

Preheat oven to 350°. 
Oil a large bread pan.
Mash bananas well. 
Cream together butter and sweetener.
Add eggs and beat until mixed.
Add yogurt, vanilla, and bananas and
  mix well. Stir in granola. 
In a separate bowl mix all other
  dry ingredients. 
Combine all and mix well. 
Bake for 50 to 55 minutes.


Raspberry-Filled Granola Bars Recipe

3/4 cup butter, softened

1/4 cup sugar

1 1/2 cups flour

1/2 teaspoon baking powder

1 1/2 cups Outrageous Raspberry
   Low Fat Granola

1 cup raspberry preserves

Preheat oven to 375°.
Cream together butter and sugar.
In a separate bowl pre-mix flour and
  baking powder. 
Add granola and mix.
Add dry mixture to butter and sugar,
  mixing together to form a crumbly
  consistency.
Pat 2/3 of the mixture into a baking pan
  (about 13x9 inches). 
Spread preserves onto mix, and cover
  preserves with the remaining mixture. 
Bake for 20 to 25 minutes. 
Cool pan on an elevated rack to allow
  air flow. Cut into bars or squares.


Chocolate Granola Squares

1 12 oz. package of chocolate chips
    or about 2 cups chips

2 cups your favorite NENB granola

 Slowly melt chocolate in a medium pan,
  stirring gently. When smooth, stir in
  all granola except a few tablespoons for   topping. 
Pour into an oiled dish about 9 x 5
  inches. Spread evenly and sprinkle with   remaining granola for topping. 
Cool to room temperature, then
  refrigerate for 30 to 60 minutes.
Cut into squares.


Maple Drop Cookies Recipe

3/4 cup butter, softened

3/4 cup maple syrup

1 egg

1 teaspoon vanilla

1 1/3 cups flour

1/2 teaspoon baking powder

3/4 cup raisins or other dried fruit

3 cups your favorite NENB granola

Preheat oven to 350°.
 Cream together butter and maple syrup. 
Add egg and vanilla and mix well. 
In a separate bowl mix the flour and
  baking powder well, adding fruit and
  granola.
Combine all ingredients and mix. 
Drop onto oiled cookie sheet,
  baking for 10 to 12 minutes.

 

 

Chicken (or Tofu) Almond Spread Recipe

2 cups diced cooked chicken,
    or 2 cups cooked cubed tofu

3/4 cup diced Tamari Almonds
    or Smoked Roasted Almonds

1/2 cup mayonnaise
    or creamy salad dressing

pinch of paprika

Blend together to form a spread. 
Use as is with chips or crackers,
  or spread on chips and broil until   lightly browned.


Good Morning! Granola Muffins Recipe

1 egg

1 cup buttermilk
    or 1/2 cup milk and 1/2 cup yogurt

1/2 cup brown sugar

1/3 cup melted butter or oil

1 1/4 cups flour

1 teaspoon baking powder

1/2 teaspoon baking soda

3/4 teaspoon salt

1 1/2 cups your favorite NENB granola
    (any flavor, or match with
    flavored yogurt)

Preheat oven to 400°. 
Oil a 12 count muffin pan.
Beat egg slightly, add buttermilk,
  sugar and butter.
In a separate bowl, pre-mix all dry
  ingredients.
Add dry mix to wet, stirring slightly
  until flour is just moistened.
Fill cups 2/3 full and bake for
  20 to 25 minutes.
Remove from pan immediately.


Granola Pie Crust Recipe

2 cups of mashed your favorite
    NENB granola

1/4 cup flour

1/2 to 2/3 cup melted butter or oil

Preheat oven to 325°.
 Combine all ingredients. Use
   enough butter or oil to provide a
   consistency that can be pressed into
   a glass pie dish. 
Bake for 10 to 12 minutes.


Banana Crunch Pancakes Recipe

1 ripe banana, mashed (about 3/4 cup)

1 1/2 cups yogurt

2 teaspoons vanilla

4 egg whites

1 cup flour

2 teaspoons baking soda

1/2 teaspoon salt

1 cup Banana Crunch Low Fat    granola

 Mash banana well, add yogurt and
  vanilla and mix. 
In a separate bowl, beat egg whites
  until peaks form. 
In a second bowl, mix all dry
  ingredients until well blended. 
Mix wet and dry ingredients together,
  and then fold in egg whites until just
  incorporated. 
Pour 1/3 cup scoops onto a hot oiled
  skillet, assisting as needed to form
  3 and 1/2 inch circles. Cook for about
  1 minute until bubbles appear on
  surface, flip and cook another minute. 
Serve with favorite toppings.


Maple Organic Harvest Cookies Recipe

1/2 cup butter, softened

3/4 cup maple syrup

1 egg

1 teaspoon vanilla or lemon extract

1 1/3 cups plus 1 tablespoon flour

1/2 teaspoon baking powder

1/2 teaspoon salt

1 1/2 cup Organic Harvest Trail Mix

Preheat oven to 375°.
 Cream together butter and
  maple syrup.
Add egg and extract and mix well. 
 In a separate bowl mix flour,
  baking powder and salt well.
  Stir in trail mix. 
Add dry ingredients to wet and mix. 
Drop onto oiled cookie sheet,
  baking 8 to 10 minutes.
