Delicious "Breaded" Chicken Cutlets using New England Naturals Hemp and Flax Organic Granola (Pork or Fish works well with this recipe too)
For about 4 servings
Soak Cutlets in 1 ½ cups Buttermilk for 30 to 45 minutes (depending on thickness)
Blend following in a food processor to achieve coarse crumbs:
2 cups New England Naturals Hemp & Flax Organic Granola
¼ cup flour
Pinch of salt and fresh-ground pepper to taste.
Coat cutlets with crumb mixture.
Heat skillet with 3 Tablespoons oil.
Cook cutlets 4 minutes per side.
